In addition to the warnings and cautions in this manual, use the following guidelines
for safe operation of the unit.
• Read all instructions before using equipment.
• For your safety, the equipment is furnished with a properly grounded cord
connector.
• Do not attempt to remove or disconnect the grounded connector.
• Install or locate the equipment only for its intended use as described in this
manual.
• Do not use corrosive chemicals in this equipment.
• Do not operate this equipment if it has a damaged cord or plug, if it is not working
properly, or if it has been damaged or dropped.
• This equipment should be serviced by qualied personnel only. Contact the
nearest Duke authorized service facility for adjustment or repair.
• Do not block or cover any openings on the unit.
• Do not immerse cord or plug in water.
• Keep cord away from heated surfaces.
• Do not allow cord to hang over edge of table or counter.
The following warnings and cautions appear throughout this manual and should
be carefully observed.
• Turn the unit o, disconnect the power source and allow unit to cool down before
performing any service or maintenance on the unit.
• The procedures in this manual may include the use of chemical products. You must
read the Material Safety Data Sheets before using any of these products.
• The unit should be grounded according to local electrical codes to prevent the
possibility of electrical shock. It requires a grounded receptacle with dedicated
electrical lines, protected by fuses or circuit breaker of the proper
rating, in accordance with all applicable regulations.
• Disposal of the unit must be in accordance with local environmental codes and/or
any other applicable codes.
• This appliance is not intended for use by persons (including children) with reduced
physical, sensory or mental capabilities, or lack of experience and knowledge,
unless they have been given supervision or instruction concerning use of the
appliance by a person responsible for their safety.

Tools required (NOT PROVIDED) for this installation
Hammer #2 Phillips Screw Driver 3/32” Hex Key
Crowbar or Pry-Bar 7/16” and 5/16”

b) Carefully remove outer crating
using a hammer and crowbar/pry
bar. Remove carton top.
d) Using #2 Phillips Screwdriver remove (4) screws
securing IVS in carton. Lift IVS out of carton and
inspect for any shipping damage.
c) Remove (4) screws from the top
of the hood.
Step 1: Unpacking
a) Inspect crate for any damage

e) Apply foam tape to underside of IVS on the ang-
es as shown. Foam tape is packed along with the
IVS unit.

Step 2:
IVS should be mounted so that the Blower Motor is above the handle side of the door in order to eciently
capture steam as the Oven door is opened
Right side handle door (Left side hinges) Left side handle door (Right side hinges)
To change orientation of the IVS to match your oven:
a) Remove the four nuts holding on the cover plate
for the opposite side motor mounting
b) Remove the four nuts holding on the Motor
c) Move motor to opposite side, using the four nuts
to secure motor
d) Replace cover plate for the opposite side motor
mounting, using the four nuts to secure cover plate

Step 3: Remove Old Oven Shroud
a) Remove 6 screws, 3 on the left side and 3 on the
right side of shroud, SAVE SCREWS
b) Remove 3 screws from the inner front side of
shroud, SAVE SCREWS
c) Remove and discard old oven shroud.
Step 4: Installation of the IVS Hood
a) Set new IVS on top of baking center
b) Align and install in three screws in front edge of
IVS

c) Align and install in 6 screws, 3 on the left side
and 3 on the right side of shroud.

Step 5: Connect Oven Vent & Electrical to IVS
a) Loosen hex set screw on Oven Vent Cap
c) Remove 2 hex head screws that secure wire
clamps.
b) Remove and discard Oven Vent Cap
d) Remove 2 protective wire caps
e) Connect motor wire“A” and “BRN1” each to an
“ELC0191” Harness. Connect (2) ELC0191 harnesses
to IVS Motor wires. See Wire Diagram page 12.

f) Connect cooling fan wires to Wago connections
on cooling fan.

g) Place wires between Oven Motor and Motor
Capacitor.
h) Zip-tie wires in 3 places
j) Slide vent tube through hole in top panel. Con-
nect vent tube with inner liner tube to oven and
tighten clamp

i) Replace top panel. Use (2) lever lock splices to
connect stripped wires to cooling fan on top panel.

k) Install Back cover

Connect the IVS blower
outlet as required per local
codes and/or other appli-
cable codes using 4” rigid
metal duct work. Do not
use plastic dryer duct vent.
Duct and clamps are not
included with the IVS.

a. This oven appliance must be secured to building
structure.Arestrainingdevicekit(#153586)wasprovided
with the proofer/oven unit to limit the movement of the
appliance without depending on or transmitting stress
to the electrical conduit. Installation instruction is in the
kit.
